- 2 lbs young beef, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 2 potatoes, diced
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons flour (optional, for thickening)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the young beef cubes and brown on all sides.
- Add the chopped onion and minced garlic to the pot, and cook until the onion is translucent.
- Stir in the sliced carrots and diced potatoes, and cook for another 5 minutes.
- Pour in the beef broth, and add the thyme, rosemary, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover, and let simmer for 1.5 to 2 hours, or until the beef is tender.
- If you prefer a thicker stew, mix the flour with a little water to create a slurry, and stir it into the stew during the last 10 minutes of cooking.
- Serve hot, garnished with fresh herbs if desired.
