Ingredients

  • 2 lbs young beef, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 2 potatoes, diced
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons flour (optional, for thickening)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the young beef cubes and brown on all sides.
  2. Add the chopped onion and minced garlic to the pot, and cook until the onion is translucent.
  3. Stir in the sliced carrots and diced potatoes, and cook for another 5 minutes.
  4. Pour in the beef broth, and add the thyme, rosemary, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low, cover, and let simmer for 1.5 to 2 hours, or until the beef is tender.
  6. If you prefer a thicker stew, mix the flour with a little water to create a slurry, and stir it into the stew during the last 10 minutes of cooking.
  7. Serve hot, garnished with fresh herbs if desired.
