- 1/2 cup breadcrumbs

- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro (optional)
- 1 egg (or flax egg for a vegan option)
- Burger buns
- Toppings: lettuce, tomato, avocado, cheese, etc.
Instructions
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunky bits for texture.
- Add the breadcrumbs, corn, onion, garlic, cumin, smoked paprika, salt, and pepper to the mashed beans. Mix until well combined.
- If using, stir in the chopped cilantro and the egg or flax egg until everything is mixed well.
- Form the mixture into patties (about 4-6, depending on desired size).
- Heat a non-stick skillet or grill over medium heat and lightly grease if necessary.
- Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
- Serve on burger buns with your favorite toppings.
Notes
- For a spicier kick, add some diced jalapeños or cayenne pepper to the mixture.
- These patties can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for longer storage.
