- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tablespoon pure vanilla extract
- 1/4 teaspoon salt
- 5 large egg yolks
Instructions
- In a medium saucepan, whisk together the sugar, egg yolks, and salt until well combined.
- Add the milk and cream to the saucepan and stir to combine.
- Cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon, about 8-10 minutes.
- Remove from heat and stir in the vanilla extract.
- Pour the mixture through a fine-mesh sieve into a bowl to remove any cooked egg bits.
- Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
- Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions.
- Transfer the ice cream to an airtight container and freeze until firm, about 2-4 hours.
