Ingredients

  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1/4 teaspoon salt
  • 5 large egg yolks

Instructions

  1. In a medium saucepan, whisk together the sugar, egg yolks, and salt until well combined.
  2. Add the milk and cream to the saucepan and stir to combine.
  3. Cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon, about 8-10 minutes.
  4. Remove from heat and stir in the vanilla extract.
  5. Pour the mixture through a fine-mesh sieve into a bowl to remove any cooked egg bits.
  6. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
  7. Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions.
  8. Transfer the ice cream to an airtight container and freeze until firm, about 2-4 hours.
