Ingredients

- 4 cups mixed greens (spinach, arugula, or lettuce)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced (any color)
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Fresh herbs (basil, parsley, or cilantro) for garnish
Instructions
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Garnish with fresh herbs before serving.
