This grilled lemon herb chicken is a perfect summer recipe for dinner. It’s juicy, flavorful, and pairs well with a variety of sides.

- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice of 2 lemons
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper.
- Place chicken breasts in a resealable plastic bag and pour marinade over the chicken. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
- Remove from the grill and let rest for 5 minutes before slicing and serving.
