- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice of 2 lemons
- 2 teaspoons dried oregano
- 2 teaspoons garlic powder
- Salt and pepper to taste
- 2 zucchinis, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup cherry tomatoes
- Fresh parsley for garnish
Instructions
- In a bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- Add chicken breasts to the marinade, cover, and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- While the grill is heating, toss the sliced vegetables with olive oil, salt, and pepper.
- Grill the chicken for about 6-7 minutes per side, or until fully cooked.
- At the same time, grill the vegetables in a grill basket for about 5-7 minutes or until tender.
- Remove chicken and veggies from the grill and let rest for a few minutes.
- Serve the grilled chicken with the summer veggies and garnish with fresh parsley.
