Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • 2 zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes
  • Fresh parsley for garnish

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  2. Add chicken breasts to the marinade, cover, and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. While the grill is heating, toss the sliced vegetables with olive oil, salt, and pepper.
  5. Grill the chicken for about 6-7 minutes per side, or until fully cooked.
  6. At the same time, grill the vegetables in a grill basket for about 5-7 minutes or until tender.
  7. Remove chicken and veggies from the grill and let rest for a few minutes.
  8. Serve the grilled chicken with the summer veggies and garnish with fresh parsley.
