Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 cup heavy cream
  • 1/2 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, salt, and softened butter. Mix until crumbly.
  3. Add the egg yolk and mix until the dough forms a ball.
  4. Press the dough into a 9-inch tart pan evenly across the bottom and up the sides. Prick the bottom with a fork.
  5. Bake for 15-20 minutes or until golden brown. Allow to cool completely.
  6. In another bowl, whip the heavy cream until soft peaks form.
  7. Add mascarpone cheese, powdered sugar, and vanilla extract to the whipped cream. Mix until smooth and fluffy.
  8. Spread the mascarpone mixture evenly over the cooled tart crust.
  9. Top with fresh mixed berries and garnish with mint leaves if desired.
  10. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • Feel free to use any combination of fresh berries you like.
  • The tart can be made a day in advance; just add the berries before serving to keep them fresh.
