  • 1 cup barbecue sauce
  • 1/2 cup chicken broth
  • 1 cup corn kernels (fresh or frozen)
  • 1 bell pepper, chopped
  • 1 onion, sliced
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. In a separate bowl, mix together barbecue sauce, chicken broth, garlic powder, paprika, salt, and pepper.
  3. Pour the sauce mixture over the chicken.
  4. Add corn, bell pepper, and onion on top.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  6. Once cooked, shred the chicken with two forks and stir everything together.
