A classic dessert made with layers of sweet biscuits, fresh strawberries, and whipped cream.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Add heavy cream to the mixture and stir until just combined.
  5. Turn the dough out onto a floured surface and gently knead it a few times until it comes together.
  6. Pat the dough into a 1-inch thick rectangle and cut into rounds using a biscuit cutter.
  7. Place the rounds onto a baking sheet and bake for 15-20 minutes or until golden brown.
  8. While the biscuits bake, toss sliced strawberries with powdered sugar and let sit for 15 minutes.
  9. In a separate bowl, whip heavy cream with vanilla extract until soft peaks form.
  10. To assemble, slice the biscuits in half, layer strawberries and whipped cream in between, and top with the other half. Serve immediately.

Notes

  • For extra flavor, add a splash of lemon juice to the strawberries.
  • Use a light hand when mixing the dough to keep the biscuits tender.
