Description
A classic dessert made with layers of sweet biscuits, fresh strawberries, and whipped cream.
Ingredients
Scale
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 4 cups fresh strawberries, hulled and sliced
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add heavy cream to the mixture and stir until just combined.
- Turn the dough out onto a floured surface and gently knead it a few times until it comes together.
- Pat the dough into a 1-inch thick rectangle and cut into rounds using a biscuit cutter.
- Place the rounds onto a baking sheet and bake for 15-20 minutes or until golden brown.
- While the biscuits bake, toss sliced strawberries with powdered sugar and let sit for 15 minutes.
- In a separate bowl, whip heavy cream with vanilla extract until soft peaks form.
- To assemble, slice the biscuits in half, layer strawberries and whipped cream in between, and top with the other half. Serve immediately.
Notes
- For extra flavor, add a splash of lemon juice to the strawberries.
- Use a light hand when mixing the dough to keep the biscuits tender.
