- 4 cups fresh strawberries, hulled and sliced
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 cup cold butter, cubed
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, vanilla extract, and cinnamon. Mix well and pour into a greased 9×13 inch baking dish.
- In another bowl, combine the rolled oats, flour, brown sugar, and salt. Add the cold butter and mix until crumbly.
- Sprinkle the oat mixture evenly over the fruit mixture in the baking dish.
- Bake in preheated oven for 30-35 minutes, or until the topping is golden brown and the fruit is bubbling.
- Allow to cool for a few minutes before serving. Serve warm with ice cream or whipped cream if desired.
Notes
- You can substitute frozen strawberries and rhubarb if fresh is not available, just increase baking time slightly.
- For added flavor, consider adding a tablespoon of lemon juice to the fruit mixture.
