Ingredients

  • 4 cups fresh strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup cold butter, cubed
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, vanilla extract, and cinnamon. Mix well and pour into a greased 9×13 inch baking dish.
  3. In another bowl, combine the rolled oats, flour, brown sugar, and salt. Add the cold butter and mix until crumbly.
  4. Sprinkle the oat mixture evenly over the fruit mixture in the baking dish.
  5. Bake in preheated oven for 30-35 minutes, or until the topping is golden brown and the fruit is bubbling.
  6. Allow to cool for a few minutes before serving. Serve warm with ice cream or whipped cream if desired.

Notes

  • You can substitute frozen strawberries and rhubarb if fresh is not available, just increase baking time slightly.
  • For added flavor, consider adding a tablespoon of lemon juice to the fruit mixture.
