Deliciously sweet and tangy strawberry rhubarb bars with a buttery crust and a crumbly topping.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • 1 cup diced strawberries
  • 1 cup diced rhubarb
  • 1/4 cup cornstarch
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan.
  2. In a mixing bowl, combine flour, granulated sugar, melted butter, and salt. Mix until crumbly.
  3. Press the mixture into the bottom of the prepared baking pan to form the crust.
  4. In another bowl, combine strawberries, rhubarb, cornstarch, brown sugar, vanilla extract, and cinnamon. Mix well.
  5. Spread the fruit mixture over the crust in the baking pan.
  6. In a separate bowl, combine the remaining crumb mixture with rolled oats. Sprinkle this over the fruit layer.
  7. Bake for 40-45 minutes, or until the top is golden brown and the fruit is bubbly.
  8. Allow to cool completely before cutting into bars. Serve and enjoy!

Notes

  • For a sweeter taste, you can increase the sugar in the filling.
  • Make sure to use fresh rhubarb for the best flavor.
