- 8 ounces pasta (your choice)
- 1 pound flank steak
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 cups fresh arugula
- 1/2 cup grated Parmesan cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup balsamic vinaigrette
- 1/4 cup chopped fresh basil (optional)
Instructions
- Cook the pasta according to package directions. Drain and set aside.
- Season the flank steak with olive oil, salt, and pepper on both sides.
- Heat a grill or grill pan over medium-high heat. Cook the steak for about 5-7 minutes per side, or until desired doneness.
- Remove the steak from the grill and let it rest for 5 minutes before slicing into thin strips.
- In a large bowl, combine the cooked pasta, arugula, cherry tomatoes, and Parmesan cheese.
- Add the sliced steak on top of the salad mixture.
- Drizzle with balsamic vinaigrette and toss gently to combine.
- Top with fresh basil if using, and serve immediately.
