Ingredients

  • 500g fresh asparagus, trimmed
  • 250g puff pastry, thawed
  • 200g cream cheese
  • 100ml heavy cream
  • 2 large eggs
  • 50g grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Fresh herbs (like dill or parsley) for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface and place it into a tart pan, trimming any excess around the edges.
  3. In a mixing bowl, combine cream cheese, heavy cream, eggs, Parmesan cheese, salt, and pepper. Whisk until smooth.
  4. Pour the cream mixture into the pastry shell, spreading it evenly.
  5. Arrange the asparagus on top of the cream mixture, drizzling with olive oil and seasoning with additional salt and pepper.
  6. Bake in the preheated oven for 25-30 minutes, or until the tart is golden and the asparagus is tender.
  7. Remove from the oven and let it cool for a few minutes before garnishing with fresh herbs.
  8. Slice into 6 portions and serve warm.

Notes
