- 500g fresh asparagus, trimmed
- 250g puff pastry, thawed
- 200g cream cheese
- 100ml heavy cream
- 2 large eggs
- 50g grated Parmesan cheese
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Fresh herbs (like dill or parsley) for garnish
Instructions
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface and place it into a tart pan, trimming any excess around the edges.
- In a mixing bowl, combine cream cheese, heavy cream, eggs, Parmesan cheese, salt, and pepper. Whisk until smooth.
- Pour the cream mixture into the pastry shell, spreading it evenly.
- Arrange the asparagus on top of the cream mixture, drizzling with olive oil and seasoning with additional salt and pepper.
- Bake in the preheated oven for 25-30 minutes, or until the tart is golden and the asparagus is tender.
- Remove from the oven and let it cool for a few minutes before garnishing with fresh herbs.
- Slice into 6 portions and serve warm.
Notes
- You can substitute the asparagus with other vegetables like spinach or zucchini if desired.
- Serve with a side salad for a complete meal.
