This Smoky Grilled Caesar Salad is a fresh take on the classic, featuring smoky grilled romaine, crispy Parmesan chips, and a rich caesar dressing.


Ingredients

  • 2 heads of romaine lettuce, halved lengthwise
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 cup grated Parmesan cheese
  • 1/2 cup Caesar dressing
  • 1/4 cup croutons
  • Freshly ground black pepper, for serving

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the cut sides of the romaine lettuce with olive oil and season with salt and pepper.
  3. Place the romaine halves cut-side down on the grill. Grill for 2-3 minutes until charred and slightly wilted.
  4. While the romaine is grilling, prepare the Parmesan crisps by placing small mounds of grated Parmesan cheese on a baking sheet lined with parchment paper. Bake at 400°F (200°C) for 5-7 minutes until golden and crispy.
  5. Remove the grilled romaine from the grill and drizzle with Caesar dressing.
  6. Top with croutons, freshly ground black pepper, and serve with Parmesan crisps on the side.

Notes

  • For extra flavor, add grilled chicken or shrimp for protein.
  • Make sure to watch the Parmesan crisps closely while baking to prevent burning.
