This Smoky Grilled Caesar Salad is a fresh take on the classic, featuring smoky grilled romaine, crispy Parmesan chips, and a rich caesar dressing.

- 2 heads of romaine lettuce, halved lengthwise
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 cup grated Parmesan cheese
- 1/2 cup Caesar dressing
- 1/4 cup croutons
- Freshly ground black pepper, for serving
Instructions
- Preheat your grill to medium-high heat.
- Brush the cut sides of the romaine lettuce with olive oil and season with salt and pepper.
- Place the romaine halves cut-side down on the grill. Grill for 2-3 minutes until charred and slightly wilted.
- While the romaine is grilling, prepare the Parmesan crisps by placing small mounds of grated Parmesan cheese on a baking sheet lined with parchment paper. Bake at 400°F (200°C) for 5-7 minutes until golden and crispy.
- Remove the grilled romaine from the grill and drizzle with Caesar dressing.
- Top with croutons, freshly ground black pepper, and serve with Parmesan crisps on the side.
Notes
- For extra flavor, add grilled chicken or shrimp for protein.
- Make sure to watch the Parmesan crisps closely while baking to prevent burning.
