- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper (optional for heat)
- Wood chips for smoking (hickory or applewood recommended)
Instructions
- Prepare your smoker according to the manufacturer’s instructions and preheat to 250°F (120°C).
- In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using) to create a rub.
- Pat the chicken dry with paper towels. Rub the spice mixture all over the chicken, ensuring even coverage.
- Place the chicken in the smoker, breast side up. Add wood chips to the smoker box or directly on the coals according to your smoker’s instructions.
- Smoke the chicken at 250°F (120°C) for about 3-4 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the breast and thigh.
- Once done, remove the chicken from the smoker and let it rest for 10-15 minutes before carving.
