  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional for heat)
  • Wood chips for smoking (hickory or applewood recommended)

Instructions

  1. Prepare your smoker according to the manufacturer’s instructions and preheat to 250°F (120°C).
  2. In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using) to create a rub.
  3. Pat the chicken dry with paper towels. Rub the spice mixture all over the chicken, ensuring even coverage.
  4. Place the chicken in the smoker, breast side up. Add wood chips to the smoker box or directly on the coals according to your smoker’s instructions.
  5. Smoke the chicken at 250°F (120°C) for about 3-4 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the breast and thigh.
  6. Once done, remove the chicken from the smoker and let it rest for 10-15 minutes before carving.

Notes

  • For best results, use a meat thermometer to check the internal temperature.
