S’mores Brownies with Torched Meringue: 5-Star Delight

Description

Decadent brownies topped with a fluffy, torched meringue and a graham cracker crust. A perfect twist on the classic s’mores dessert.


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup graham cracker crumbs
  • 2 cups mini marshmallows
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar (for meringue)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×9 inch baking pan with parchment paper.
  2. In a mixing bowl, combine melted butter, granulated sugar, and brown sugar. Stir until well mixed.
  3. Add eggs and vanilla extract to the mixture, and mix until combined.
  4. In another bowl, whisk together flour, cocoa powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Fold in chocolate chips and pour the batter into the prepared baking pan. Smooth the top with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Remove from the oven and immediately sprinkle graham cracker crumbs and mini marshmallows on top. Return to the oven for an additional 5 minutes, until the marshmallows are slightly toasted.
  8. For the meringue, in a clean bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add the granulated sugar, beating until stiff peaks form.
  9. Spread the meringue over the marshmallows and use a kitchen torch to lightly brown the top.
  10. Allow to cool before slicing into squares and serving.
