Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine the halved baby potatoes and carrot pieces.
- Drizzle the olive oil over the vegetables and sprinkle with garlic powder, paprika, salt, and pepper. Toss until evenly coated.
- Place the seasoned potatoes and carrots in the air fryer basket in a single layer.
- Cook for 15-20 minutes, shaking the basket halfway through, until the vegetables are tender and caramelized.
- Remove from the air fryer and garnish with fresh parsley if desired. Serve hot.
