This easy Rhubarb Dump Cake uses a cake mix to create a delicious and tangy dessert that is perfect for any occasion.

- 4 cups fresh rhubarb, chopped
- 1 cup granulated sugar
- 1 box (15.25 oz) yellow cake mix
- 1 cup butter, melted
- 1 cup water
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the chopped rhubarb and granulated sugar. Stir until the rhubarb is coated with sugar. Let it sit for 10 minutes.
- Spread the rhubarb mixture evenly in the bottom of a 9×13 inch baking dish.
- In another bowl, mix the cake mix with the melted butter, water, vanilla extract, and cinnamon (if using) until just combined.
- Pour the cake batter evenly over the rhubarb in the baking dish. Do not stir.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the rhubarb is bubbling.
- Let the cake cool for a few minutes before serving. Serve warm with whipped cream or ice cream if desired.
Notes
- For a sweeter cake, you can add more sugar to the rhubarb mixture.
- Feel free to mix in other fruits like strawberries or raspberries for added flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
