  • 1 box (15.25 oz) yellow cake mix
  • 1 cup butter, melted
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped rhubarb and granulated sugar. Stir until the rhubarb is coated with sugar. Let it sit for 10 minutes.
  3. Spread the rhubarb mixture evenly in the bottom of a 9×13 inch baking dish.
  4. In another bowl, mix the cake mix with the melted butter, water, vanilla extract, and cinnamon (if using) until just combined.
  5. Pour the cake batter evenly over the rhubarb in the baking dish. Do not stir.
  6. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the rhubarb is bubbling.
  7. Let the cake cool for a few minutes before serving. Serve warm with whipped cream or ice cream if desired.
