Description
A simple and delicious rhubarb dump cake that combines tart rhubarb with a buttery cake mix for an easy dessert.

- 4 cups fresh rhubarb, chopped
- 1 cup granulated sugar
- 1 package (15.25 oz) yellow cake mix
- 1 cup unsalted butter, melted
- 1 cup water
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the chopped rhubarb and granulated sugar. Stir well and let sit for about 10 minutes to release juices.
- Spread the rhubarb mixture evenly in a greased 9×13 inch baking dish.
- In a separate bowl, mix the cake mix with water, melted butter, vanilla extract, and cinnamon until just combined.
- Pour the cake batter over the rhubarb mixture in the baking dish. Do not stir.
- Bake in the preheated oven for 45-50 minutes or until the top is golden brown and the rhubarb is bubbling.
- Allow to cool slightly before serving. Serve warm with ice cream or whipped cream, if desired.
Notes
- You can use frozen rhubarb, just make sure to thaw and drain excess moisture.
- Feel free to add some chopped nuts or oats to the cake mix for added texture.
- For a sweeter cake, increase the sugar to 1 1/2 cups.
