  • 1 cup granulated sugar
  • 1 package (15.25 oz) yellow cake mix
  • 1 cup unsalted butter, melted
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped rhubarb and granulated sugar. Stir well and let sit for about 10 minutes to release juices.
  3. Spread the rhubarb mixture evenly in a greased 9×13 inch baking dish.
  4. In a separate bowl, mix the cake mix with water, melted butter, vanilla extract, and cinnamon until just combined.
  5. Pour the cake batter over the rhubarb mixture in the baking dish. Do not stir.
  6. Bake in the preheated oven for 45-50 minutes or until the top is golden brown and the rhubarb is bubbling.
