  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, cream together the butter, sugar, and salt until light and fluffy.
  3. Mix in 1 cup of flour until the mixture resembles coarse crumbs.
  4. Press the mixture into the bottom of an 8×8 inch baking dish to form the crust.
  5. Bake the crust in the preheated oven for 15 minutes.
  6. In another bowl, combine the rhubarb, sugar, eggs, 1/4 cup flour, vanilla extract, and baking powder.
  7. Pour the rhubarb filling over the pre-baked crust and spread evenly.
