- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup rhubarb, chopped
- 1 cup granulated sugar (for filling)
- 2 large eggs
- 1/4 cup all-purpose flour (for filling)
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, cream together the butter, sugar, and salt until light and fluffy.
- Mix in 1 cup of flour until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of an 8×8 inch baking dish to form the crust.
- Bake the crust in the preheated oven for 15 minutes.
- In another bowl, combine the rhubarb, sugar, eggs, 1/4 cup flour, vanilla extract, and baking powder.
- Pour the rhubarb filling over the pre-baked crust and spread evenly.
- Return the dish to the oven and bake for an additional 25-30 minutes, or until the filling is set.
- Allow to cool completely before cutting into bars. Serve and enjoy!
