- 4 cups chopped rhubarb
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 tablespoon lemon juice
- 1 cup rolled oats
- 1 cup brown sugar
- 1/2 cup all-purpose flour
- 1/2 cup softened butter
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the chopped rhubarb, granulated sugar, 1/4 cup flour, and lemon juice. Mix well and spread the mixture evenly in a greased 9×13 inch baking dish.
- In another bowl, mix together the rolled oats, brown sugar, 1/2 cup flour, softened butter, cinnamon, and salt until crumbly.
- Sprinkle the oat mixture evenly over the rhubarb filling in the baking dish.
- Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the rhubarb is bubbling.
- Remove from the oven and let cool slightly before serving.
