- 4 cups rhubarb, chopped
- 1 cup granulated sugar

- 1/2 cup brown sugar, packed
- 1/2 teaspoon cinnamon
- 1/2 cup unsalted butter, melted

Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the chopped rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well and pour into a greased 9×13 inch baking dish.
- In another bowl, combine the flour, rolled oats, brown sugar, cinnamon, and salt. Drizzle in the melted butter and mix until crumbly.
- Sprinkle the crumble mixture evenly over the rhubarb filling.
- Bake in the preheated oven for 35 to 40 minutes, or until the topping is golden brown and the rhubarb is bubbling.
- Allow to cool slightly before serving warm, optionally with a scoop of vanilla ice cream.
