Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup brown sugar, packed
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the rhubarb, granulated sugar, 1/4 cup of flour, and vanilla extract. Toss to coat the rhubarb evenly.
  3. Transfer the rhubarb mixture into a greased 9×13 inch baking dish.
  4. In another bowl, mix together the oats, brown sugar, 1/2 cup flour, and cinnamon.
  5. Pour the melted butter over the oat mixture and stir until the mixture is crumbly.
  6. Spread the oat topping evenly over the rhubarb mixture in the baking dish.
  7. Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the rhubarb is bubbling.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

  • Serve warm with vanilla ice cream for an extra treat.
  • You can substitute part of the rhubarb with strawberries for a strawberry-rhubarb crisp.
