- 4 cups rhubarb, chopped
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup brown sugar, packed
- 1/2 cup all-purpose flour
- 1/2 teaspoon cinnamon
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the rhubarb, granulated sugar, 1/4 cup of flour, and vanilla extract. Toss to coat the rhubarb evenly.
- Transfer the rhubarb mixture into a greased 9×13 inch baking dish.
- In another bowl, mix together the oats, brown sugar, 1/2 cup flour, and cinnamon.
- Pour the melted butter over the oat mixture and stir until the mixture is crumbly.
- Spread the oat topping evenly over the rhubarb mixture in the baking dish.
- Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the rhubarb is bubbling.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- Serve warm with vanilla ice cream for an extra treat.
- You can substitute part of the rhubarb with strawberries for a strawberry-rhubarb crisp.
