Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the chopped rhubarb, granulated sugar, 1/4 cup flour, and vanilla extract. Mix well and pour into a greased 9×13-inch baking dish.
  3. In another bowl, combine the rolled oats, 1 cup flour, brown sugar, and cinnamon. Stir in the melted butter until the mixture is crumbly.
  4. Sprinkle the crumble mixture evenly over the rhubarb filling in the baking dish.
  5. Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the rhubarb is bubbly.
  6. Allow to cool slightly before serving warm, optionally with ice cream or whipped cream.

Notes

  • For a sweeter filling, you can increase the sugar to taste.
