Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup rhubarb, chopped
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a mixing bowl, combine 1 cup flour, powdered sugar, and softened butter. Mix until crumbly and press into the bottom of the prepared baking dish.
  3. In another bowl, whisk together the granulated sugar, eggs, 2 tablespoons flour, vanilla extract, and salt until well combined.
  4. Fold in the chopped rhubarb into the egg mixture.
  5. Pour the rhubarb mixture over the crust in the baking dish, spreading it evenly.
  6. Bake for 25-30 minutes, or until the filling is set and the top is lightly golden.
  7. Allow to cool completely before cutting into bars. Dust with powdered sugar if desired.

Notes

  • For a sweeter taste, you can add more sugar to the filling.
  • Try adding a little lemon zest to enhance the flavor.
