- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 cup rhubarb, chopped
- 2 tablespoons all-purpose flour
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In a mixing bowl, combine 1 cup flour, powdered sugar, and softened butter. Mix until crumbly and press into the bottom of the prepared baking dish.
- In another bowl, whisk together the granulated sugar, eggs, 2 tablespoons flour, vanilla extract, and salt until well combined.
- Fold in the chopped rhubarb into the egg mixture.
- Pour the rhubarb mixture over the crust in the baking dish, spreading it evenly.
- Bake for 25-30 minutes, or until the filling is set and the top is lightly golden.
- Allow to cool completely before cutting into bars. Dust with powdered sugar if desired.
Notes
- For a sweeter taste, you can add more sugar to the filling.
- Try adding a little lemon zest to enhance the flavor.
