- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 cup unsalted butter, softened
- 1/2 teaspoon salt
- 2 cups chopped rhubarb
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a mixing bowl, combine the flour, sugar, butter, and salt. Mix until crumbly.
- Press the mixture into the bottom of the prepared baking dish to form the crust.
- In another bowl, mix the chopped rhubarb, sugar, cornstarch, eggs, vanilla, and lemon juice until well combined.
- Pour the rhubarb mixture over the crust, spreading it evenly.
- Bake for 35-40 minutes, or until the filling is set and the top is lightly golden.
- Allow to cool completely before slicing into bars.
- Dust with powdered sugar before serving.
