  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a mixing bowl, combine the flour, sugar, butter, and salt. Mix until crumbly.
  3. Press the mixture into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, mix the chopped rhubarb, sugar, cornstarch, eggs, vanilla, and lemon juice until well combined.
  5. Pour the rhubarb mixture over the crust, spreading it evenly.
  6. Bake for 35-40 minutes, or until the filling is set and the top is lightly golden.
