- 2 pounds red potatoes
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup celery, diced
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 2 hard-boiled eggs, chopped (optional)
Instructions
- Wash the red potatoes and cut them into bite-sized pieces, leaving the skin on.
- Place the potatoes in a large pot and cover with water. Bring to a boil and cook for about 15-20 minutes or until tender. Drain and let cool.
- In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
- Add the cooled potatoes, celery, red onion, bell pepper, and parsley to the bowl. Gently toss to combine.
- If using, fold in the chopped hard-boiled eggs.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld.
- Serve chilled or at room temperature.
