- 2 pounds potatoes, peeled and cubed
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar

- 1/2 cup red onion, diced
- 3 hard-boiled eggs, chopped

Instructions
- In a large pot, cover the cubed potatoes with water and bring to a boil. Cook until tender, about 10-15 minutes. Drain and let cool.
- In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
- Once the potatoes have cooled, add them to the bowl with the dressing along with the celery, red onion, chopped eggs, and parsley. Gently fold to combine.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
