  • 1 cup packed brown sugar
  • 1 can (20 oz) sliced pineapple in juice, drained
  • Maraschino cherries (optional)
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a 9-inch round cake pan, pour the melted butter and sprinkle the brown sugar evenly over it.
  3. Arrange the pineapple slices on top of the brown sugar, and place a cherry in the center of each pineapple ring if using.
  4. In a mixing bowl, whisk together the flour, granulated sugar, salt, and baking powder.
  5. In another bowl, combine the milk, eggs, and vanilla extract. Mix well.
  6. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  7. Pour the cake batter over the pineapple and brown sugar layer in the pan.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let it cool for about 10 minutes.
  10. Carefully invert the cake onto a serving plate, allowing the pineapple topping to fall onto the cake.
