- 1/2 cup Unsalted butter
- 1 cup Granulated sugar
- 1 cup Ricotta cheese
- 2 Large eggs
- 1 teaspoon Vanilla extract
- 1 1/2 cups All-purpose flour
- 1 teaspoon Baking powder
- 1/2 teaspoon Salt
- 3–4 Fresh peaches
- 1/2 cup Brown sugar
- 1 teaspoon Cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a small saucepan, melt the unsalted butter over medium heat. Continue cooking until it turns golden brown and smells nutty. Remove from heat and let cool slightly.
- In a large mixing bowl, combine granulated sugar, ricotta cheese, eggs, and vanilla extract. Mix until smooth.
- Gradually add the browned butter into the ricotta mixture, stirring until fully incorporated.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Fold in the sliced peaches gently into the batter.
- Pour the batter into the prepared cake pan and smooth the top.
- In a small bowl, combine brown sugar, flour, cinnamon, and remaining melted butter to create the streusel. Mix until crumbly.
- Sprinkle the brown butter streusel over the top of the cake batter.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Use ripe but firm peaches for the best texture and flavor.
- This cake can be served warm or at room temperature, and it’s delicious with a dollop of whipped cream or vanilla ice cream.
