Ingredients

  • 1/2 cup Unsalted butter
  • 1 cup Granulated sugar
  • 1 cup Ricotta cheese
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 34 Fresh peaches
  • 1/2 cup Brown sugar
  • 1 teaspoon Cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a small saucepan, melt the unsalted butter over medium heat. Continue cooking until it turns golden brown and smells nutty. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine granulated sugar, ricotta cheese, eggs, and vanilla extract. Mix until smooth.
  4. Gradually add the browned butter into the ricotta mixture, stirring until fully incorporated.
  5. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
  6. Fold in the sliced peaches gently into the batter.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. In a small bowl, combine brown sugar, flour, cinnamon, and remaining melted butter to create the streusel. Mix until crumbly.
  9. Sprinkle the brown butter streusel over the top of the cake batter.
  10. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Use ripe but firm peaches for the best texture and flavor.
  • This cake can be served warm or at room temperature, and it’s delicious with a dollop of whipped cream or vanilla ice cream.
