  • 1 cup sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, 1/2 cup of sugar, lemon juice, and vanilla extract. Toss until the peaches are well coated.
  3. Pour the peach mixture into a greased 9×13 inch baking dish.
  4. In another bowl, whisk together the flour, remaining sugar, baking powder, and salt.
  5. Stir in the milk and melted butter until just combined. The batter will be lumpy.
  6. Spoon the batter over the peaches, spreading it evenly but not worrying about covering them completely.
  7. Sprinkle cinnamon on top if desired.
  8. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
  9. Let it cool slightly before serving. Enjoy warm with ice cream or whipped cream!
