Ingredients

  • 2 cups fresh blueberries
  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 loaf pound cake
  • for garnish fresh mint leaves

Instructions

  1. In a mixing bowl, combine the mascarpone cheese, heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer until soft peaks form.
  2. In a large glass trifle bowl or individual serving cups, start layering the dessert. Begin with a layer of cubed pound cake.
  3. Next, add a layer of sliced strawberries followed by a layer of blueberries.
  4. Spoon a layer of the mascarpone mixture over the berries.
  5. Repeat the layers until the bowl is filled, finishing with a layer of the mascarpone mixture on top.
  6. Garnish with additional berries and fresh mint leaves.
  7. Refrigerate the trifle for at least 1 hour before serving to let the flavors meld.
