Description

Ingredients

  • 8 ounces of rotini or fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, feta cheese, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Cover and refrigerate for at least 30 minutes before serving to let the flavors meld.
