A delicious and colorful orzo pasta salad that’s fresh and perfect for any occasion.
Ingredients

- 1 cup orzo pasta
- 2 cups water
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup bell pepper, diced
- 1/4 cup feta cheese, crumbled
- 1/4 cup parsley, chopped
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- In a saucepan, bring 2 cups of water to a boil. Add orzo pasta and cook according to package instructions until al dente. Drain and let cool.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Add the cooled orzo pasta to the vegetable mixture and pour the dressing over the top. Toss gently to combine.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
