Ingredients

  • 1 cup orzo pasta
  • 2 cups water
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup bell pepper, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup parsley, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a saucepan, bring 2 cups of water to a boil. Add orzo pasta and cook according to package instructions until al dente. Drain and let cool.
  2. In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, feta cheese, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  4. Add the cooled orzo pasta to the vegetable mixture and pour the dressing over the top. Toss gently to combine.
  5. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
