- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon culinary lavender, dried
- 1 teaspoon vanilla extract
- 1/2 cup whipped cream
- Additional lavender for garnish
Instructions
- In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Press the mixture into the bottom of mini muffin tins or silicone molds to form the crust.
- In a separate bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, lemon juice, lemon zest, dried lavender, and vanilla extract. Mix until fully combined.
- Fold in the whipped cream gently until the mixture is light and fluffy.
- Spoon the cheesecake mixture over the prepared crust in the muffin tins, filling each cup to the top.
- Refrigerate for at least 4 hours or until set. For best results, chill overnight.
- Once set, pop the cheesecake bites out of the molds and garnish with additional lavender before serving.
