Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 4 large eggs
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • Food coloring (optional)
  • Fresh flowers or edible decorations for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add this to the creamed mixture, alternating with the milk until everything is well blended.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  7. While the cakes cool, make the whipped cream by beating the heavy cream and powdered sugar until soft peaks form. Add vanilla extract and mix until combined.
  8. Once the cakes are completely cool, place one layer on a serving platter. Spread a layer of whipped cream on top.
  9. Add the second cake layer on top and frost the top and sides with the remaining whipped cream.
  10. If desired, add food coloring to some whipped cream to create decorations. Use a piping bag to create decorative patterns.
  11. Garnish with fresh flowers or edible decorations to make it extra special.
  12. Slice and serve to celebrate Mother’s Day!

Notes

  • For added flavor, consider adding lemon or almond extract to the cake batter.
  • Make sure to let the cakes cool completely before frosting to prevent melting.
