- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup milk
- 3 ½ teaspoons baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
- Food coloring (optional)
- Fresh flowers or edible decorations for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, combine the flour, baking powder, and salt. Gradually add this to the creamed mixture, alternating with the milk until everything is well blended.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- While the cakes cool, make the whipped cream by beating the heavy cream and powdered sugar until soft peaks form. Add vanilla extract and mix until combined.
- Once the cakes are completely cool, place one layer on a serving platter. Spread a layer of whipped cream on top.
- Add the second cake layer on top and frost the top and sides with the remaining whipped cream.
- If desired, add food coloring to some whipped cream to create decorations. Use a piping bag to create decorative patterns.
- Garnish with fresh flowers or edible decorations to make it extra special.
- Slice and serve to celebrate Mother’s Day!
Notes
- For added flavor, consider adding lemon or almond extract to the cake batter.
- Make sure to let the cakes cool completely before frosting to prevent melting.
