- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh herbs for garnish (optional)
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
- Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken.
- Refrigerate for at least 1 hour, or up to 8 hours for more flavor.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Remove from the grill and let rest for 5 minutes before slicing.
- Garnish with fresh herbs if desired and serve.
