Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh herbs for garnish (optional)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  2. Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken.
  3. Refrigerate for at least 1 hour, or up to 8 hours for more flavor.
  4. Preheat the grill to medium-high heat.
  5. Remove the chicken from the marinade and discard the marinade.
  6. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  7. Remove from the grill and let rest for 5 minutes before slicing.
  8. Garnish with fresh herbs if desired and serve.
