Ingredients

  • 4 medium, peeled Carrots
  • 3 tablespoons Olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Honey or maple syrup
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 cup, chopped Fresh cilantro
  • 2 tablespoons Sesame seeds

Instructions

  1. Using a vegetable peeler or mandolin, slice the peeled carrots into thin ribbons.
  2. In a small bowl, whisk together the olive oil, lemon juice, ground cumin, honey or maple syrup, salt, and black pepper until well combined.
  3. In a large bowl, combine the carrot ribbons and the dressing. Toss gently to coat the carrots evenly.
  4. Fold in the chopped cilantro and sprinkle sesame seeds on top.
  5. Serve immediately or let it marinate in the refrigerator for 15-30 minutes for enhanced flavor.

Notes

  • For a spicier kick, consider adding a pinch of cayenne pepper to the dressing.
