A vibrant and refreshing salad featuring ribboned carrots tossed in a spiced cumin dressing, perfect as a side dish or light meal.

- 4 medium, peeled Carrots
- 3 tablespoons Olive oil
- 2 tablespoons Fresh lemon juice
- 1 teaspoon Ground cumin
- 1 teaspoon Honey or maple syrup
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1/4 cup, chopped Fresh cilantro
- 2 tablespoons Sesame seeds
Instructions
- Using a vegetable peeler or mandolin, slice the peeled carrots into thin ribbons.
- In a small bowl, whisk together the olive oil, lemon juice, ground cumin, honey or maple syrup, salt, and black pepper until well combined.
- In a large bowl, combine the carrot ribbons and the dressing. Toss gently to coat the carrots evenly.
- Fold in the chopped cilantro and sprinkle sesame seeds on top.
- Serve immediately or let it marinate in the refrigerator for 15-30 minutes for enhanced flavor.
Notes
- For a spicier kick, consider adding a pinch of cayenne pepper to the dressing.
- You can also add other vegetables like bell peppers or radishes for added color and crunch.
