This delicious make ahead breakfast casserole is perfect for busy mornings. Prepare it the night before and simply bake it in the morning for a hearty, satisfying meal.

- 1 lb breakfast sausage, crumbled
- 1 cup diced onion
- 1 cup diced bell pepper
- 8 large eggs
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 6 cups cubed bread (preferably stale)
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook the sausage over medium heat until browned. Add the onion and bell pepper, cooking until softened.
- In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and thyme.
- In a greased 9×13 inch baking dish, layer half of the bread cubes, followed by half of the sausage mixture and half of the cheese. Repeat the layers.
- Pour the egg mixture evenly over the layers in the baking dish.
- Cover with foil and refrigerate overnight.
- In the morning, preheat the oven to 350°F (175°C) and bake covered for 30 minutes. Remove foil and bake for an additional 15-20 minutes until the eggs are set and the top is golden.
- Let cool for a few minutes before slicing and serving.

- For a spicier version, consider adding jalapeños or a spicy sausage.
