Ingredients

  • 1 lb breakfast sausage, crumbled
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 6 cups cubed bread (preferably stale)
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook the sausage over medium heat until browned. Add the onion and bell pepper, cooking until softened.
  3. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and thyme.
  4. In a greased 9×13 inch baking dish, layer half of the bread cubes, followed by half of the sausage mixture and half of the cheese. Repeat the layers.
  5. Pour the egg mixture evenly over the layers in the baking dish.
  6. Cover with foil and refrigerate overnight.
  7. In the morning, preheat the oven to 350°F (175°C) and bake covered for 30 minutes. Remove foil and bake for an additional 15-20 minutes until the eggs are set and the top is golden.
  8. Let cool for a few minutes before slicing and serving.

  • You can customize this casserole by adding your favorite vegetables or meats.
  • For a spicier version, consider adding jalapeños or a spicy sausage.
