This classic macaroni salad is a perfect summer side dish, loaded with crunchy vegetables and a creamy dressing.

- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup celery, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup red onion, diced
- 1/2 cup sweet pickles, diced
- 2 hard boiled eggs, chopped
Instructions
- Cook the elbow macaroni according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper.
- Add the cooled macaroni, celery, red bell pepper, red onion, sweet pickles, and chopped eggs to the bowl. Stir until well combined.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
Notes
- Feel free to add other vegetables like peas or carrots for extra crunch.
- This salad can be made a day ahead for convenience.
