Ingredients

  • 4 medium Zucchini Enchiladas (sliced thinly)
  • 1 lb Ground Beef (or turkey)
  • 2 tbsp Taco Seasoning (low sodium)
  • 2 cups Shredded Cheese (Mexican blend)
  • 1 cup Salsa (low carb)
  • 1/2 cup Sour Cream (for serving)
  • 1 large Avocado (sliced for garnish)
  • 1/4 cup Fresh Cilantro (chopped for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add taco seasoning and a little water to the beef, stir well and simmer for 5 minutes.
  4. In a baking dish, layer zucchini slices to form a base, then add a layer of the beef mixture.
  5. Spread a layer of salsa over the beef and sprinkle with shredded cheese.
  6. Repeat the layers until all ingredients are used, finishing with cheese on top.
  7. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until cheese is bubbly.
  8. Let cool for a few minutes, slice, and serve with sour cream, avocado, and cilantro.
