- 1 large egg yolk
- 2 tablespoons ice water

- 3 large eggs
- 1/2 cup freshly squeezed lemon juice
- Zest of 2 lemons
- 1/2 cup heavy cream
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, powdered sugar, and salt. Add chilled butter and mix until the mixture resembles coarse crumbs.
- Stir in the egg yolk and ice water until the dough comes together. Press the dough into a 9-inch tart pan and prick the bottom with a fork.
- Bake the crust for about 15 minutes or until lightly golden. Let it cool.
- In another bowl, whisk together granulated sugar, eggs, lemon juice, and lemon zest until smooth.
- Stir in heavy cream until fully combined.
- Pour the filling into the cooled crust and bake for another 20-25 minutes or until the filling is set.
- Allow the tart to cool completely before dusting with powdered sugar and serving.
