Ingredients

  • 8 oz pasta of your choice (spaghetti, fettuccine, or penne)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 lemon, zested and juiced
  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water. Reserve 1 cup of pasta water and drain the rest.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. In a large mixing bowl, combine the ricotta cheese, Parmesan cheese, lemon zest, and lemon juice. Mix until smooth and creamy.
  5. Add the cooked pasta to the skillet with the spinach and garlic, then pour in the ricotta mixture. Toss to combine, adding reserved pasta water as needed to create a creamy sauce.
  6. Season with salt and pepper to taste. Serve immediately, garnished with fresh basil or parsley if desired.
