- 8 oz pasta of your choice (spaghetti, fettuccine, or penne)
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 lemon, zested and juiced
- 2 cups fresh spinach, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Cook the pasta according to package instructions in a large pot of salted boiling water. Reserve 1 cup of pasta water and drain the rest.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- In a large mixing bowl, combine the ricotta cheese, Parmesan cheese, lemon zest, and lemon juice. Mix until smooth and creamy.
- Add the cooked pasta to the skillet with the spinach and garlic, then pour in the ricotta mixture. Toss to combine, adding reserved pasta water as needed to create a creamy sauce.
- Season with salt and pepper to taste. Serve immediately, garnished with fresh basil or parsley if desired.
Notes
- Feel free to add grilled chicken or shrimp for extra protein.
- You can substitute the spinach with other greens like kale or arugula.
