Ingredients

  • 12 oz spaghetti or linguine
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 2 lemons
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: red pepper flakes for heat

Instructions

  1. Cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the lemon zest and lemon juice to the skillet, stirring to combine.
  4. Toss in the cooked pasta and mix well, adding reserved pasta water a little at a time until the desired consistency is reached.
  5. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  6. Serve immediately, garnished with chopped parsley and red pepper flakes if desired.
