A bright and zesty lemon pasta that is simple to make and bursting with flavor.
Ingredients

- 8 oz spaghetti or linguine
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Extra lemon wedges (for serving)
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the lemon zest and juice to the skillet, stirring to combine.
- Add the cooked pasta to the skillet, tossing to coat in the lemon sauce. If the pasta seems dry, add a little reserved pasta water until you reach desired consistency.
- Stir in the grated Parmesan cheese, and season with salt and pepper to taste.
- Serve immediately, garnished with fresh parsley and extra lemon wedges on the side.
Notes
- For a creamier version, add a splash of heavy cream or a dollop of mascarpone cheese.
- This recipe can be easily doubled for a larger crowd.
