Ingredients

  • 8 oz spaghetti or linguine
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Extra lemon wedges (for serving)

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the lemon zest and juice to the skillet, stirring to combine.
  4. Add the cooked pasta to the skillet, tossing to coat in the lemon sauce. If the pasta seems dry, add a little reserved pasta water until you reach desired consistency.
  5. Stir in the grated Parmesan cheese, and season with salt and pepper to taste.
  6. Serve immediately, garnished with fresh parsley and extra lemon wedges on the side.

Notes

  • For a creamier version, add a splash of heavy cream or a dollop of mascarpone cheese.
  • This recipe can be easily doubled for a larger crowd.
