Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, mix together the flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs.
  3. Press the mixture into the bottom of the prepared baking dish to form the crust.
  4. Bake the crust for 20 minutes or until lightly golden.
  5. In another bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, baking powder, and salt until smooth.
  6. Pour the lemon mixture over the baked crust and return to the oven.
  7. Bake for an additional 20-25 minutes until the filling is set and slightly golden on the edges.
  8. Allow to cool completely before dusting with powdered sugar and cutting into squares.
