Deliciously tangy and sweet lemon bars with a buttery shortbread crust.

- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup lemon juice (freshly squeezed)
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a bowl, mix together the flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of the prepared baking dish to form the crust.
- Bake the crust for 20 minutes or until lightly golden.
- In another bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, baking powder, and salt until smooth.
- Pour the lemon mixture over the baked crust and return to the oven.
- Bake for an additional 20-25 minutes until the filling is set and slightly golden on the edges.
- Allow to cool completely before dusting with powdered sugar and cutting into squares.
