These lemon bars are the perfect balance of sweet and tart, with a buttery crust and a creamy lemon filling.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/4 cup powdered sugar
  • 4 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a mixing bowl, combine melted butter, flour, and granulated sugar to form the crust. Press the mixture into the bottom of the prepared baking pan.
  3. Bake the crust for 20 minutes, or until lightly golden.
  4. In another bowl, whisk together the eggs, powdered sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
  5. Pour the lemon filling over the baked crust and return to the oven.
  6. Bake for an additional 25-30 minutes, or until the filling is set and the edges are lightly golden.
  7. Allow to cool completely before dusting with powdered sugar and cutting into squares.

Notes

  • For a more intense lemon flavor, add an extra tablespoon of lemon zest.
  • Make sure to let the bars cool completely for easier cutting.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
