These lemon bars are the perfect balance of tart and sweet, with a buttery shortbread crust and a luscious lemon filling. A classic dessert that’s easy to make and always a crowd-pleaser!


Ingredients

  • 1 cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 eggs
  • 1/2 cup fresh lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • for dusting powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
  2. In a medium bowl, combine the melted butter, granulated sugar, flour, baking powder, and salt. Mix until well combined.
  3. Press the mixture into the bottom of the prepared baking dish to form the crust. Bake for 15-20 minutes, or until lightly golden.
  4. While the crust is baking, whisk together the eggs, fresh lemon juice, lemon zest, and granulated sugar in a separate bowl until smooth.
  5. Once the crust is done, remove it from the oven and pour the lemon filling over the hot crust.
  6. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and lightly browned on top.
  7. Allow to cool completely in the pan on a wire rack. Once cooled, dust with powdered sugar before cutting into squares.

Notes

  • For a more intense lemon flavor, increase the lemon zest.
  • These bars can be stored in an airtight container in the fridge for up to one week.
