Description
These lemon bars are the perfect balance of tart and sweet, with a buttery shortbread crust and a luscious lemon filling. A classic dessert that’s easy to make and always a crowd-pleaser!

- 1 cup unsalted butter (melted)
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 eggs
- 1/2 cup fresh lemon juice (freshly squeezed)
- 1 tablespoon lemon zest
- for dusting powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
- In a medium bowl, combine the melted butter, granulated sugar, flour, baking powder, and salt. Mix until well combined.
- Press the mixture into the bottom of the prepared baking dish to form the crust. Bake for 15-20 minutes, or until lightly golden.
- While the crust is baking, whisk together the eggs, fresh lemon juice, lemon zest, and granulated sugar in a separate bowl until smooth.
- Once the crust is done, remove it from the oven and pour the lemon filling over the hot crust.
- Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and lightly browned on top.
- Allow to cool completely in the pan on a wire rack. Once cooled, dust with powdered sugar before cutting into squares.
Notes
- For a more intense lemon flavor, increase the lemon zest.
- These bars can be stored in an airtight container in the fridge for up to one week.
