- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
- In a medium bowl, mix together the flour, powdered sugar, and softened butter until the mixture resembles coarse crumbs.
- Press the crust mixture evenly into the bottom of the prepared baking dish. Bake for 15 minutes or until lightly golden.
- While the crust is baking, whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt in a separate bowl until smooth.
- Pour the lemon filling over the hot crust and return to the oven. Bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly golden.
- Allow to cool completely in the pan before dusting with powdered sugar and cutting into squares.
