Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 3/4 cup key lime juice
  • 1 teaspoon lime zest
  • 1/4 teaspoon salt
  • Whipped cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  3. Press the graham cracker mixture into the bottom and up the sides of a 9-inch pie pan to form the crust.
  4. Bake the crust for about 8-10 minutes until golden. Remove from the oven and let it cool.
  5. In another bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, lime zest, and salt until smooth.
  6. Pour the filling into the cooled crust and spread evenly.
  7. Bake for an additional 10-15 minutes until the filling is set but still slightly jiggly in the center.
  8. Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours before serving.
  9. Serve chilled with whipped cream on top if desired.
