- 1 1/2 cups graham cracker crumbs
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 large egg yolks
- 1 can (14 oz) sweetened condensed milk
- 3/4 cup key lime juice
- 1 teaspoon lime zest
- 1/4 teaspoon salt
- Whipped cream for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Press the graham cracker mixture into the bottom and up the sides of a 9-inch pie pan to form the crust.
- Bake the crust for about 8-10 minutes until golden. Remove from the oven and let it cool.
- In another bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, lime zest, and salt until smooth.
- Pour the filling into the cooled crust and spread evenly.
- Bake for an additional 10-15 minutes until the filling is set but still slightly jiggly in the center.
- Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours before serving.
- Serve chilled with whipped cream on top if desired.
